30-Minute Turkey Zucchini Meatballs

Total Time: 30 minutes | Prep: 10 minutes | Cook: 20 minutes

Need a fresh spin on a weeknight staple that your kids will actually eat? These turkey zucchini meatballs deliver big flavor without the fuss.

Ingredients

Instructions

  1. In a large bowl, combine ground turkey, shredded zucchini, breadcrumbs, egg, parmesan, oregano, garlic powder, salt and pepper. Mix well until fully incorporated.
  2. Form mixture into 1-inch meatballs and place on a baking sheet. Use a small cookie scoop to keep them uniform.
  3. In a large skillet, heat olive oil over medium-high heat. Cook meatballs in batches for 4-5 minutes per batch, turning frequently until browned on all sides.
  4. Transfer browned meatballs to a plate. Once all meatballs are cooked, return them to the skillet and pour marinara sauce over top. Simmer for 5 minutes until heated through.

Serves 4 – perfect for a family-friendly weeknight meal

Picky Eaters

  • Grate the zucchini finely so it “hides” in the meatballs
  • Let kids help shape and roll the meatballs for more buy-in
  • Serve meatballs with a side of marinara for dipping instead of mixed in

Easy Swaps

Veggie: Substitute shredded carrot or finely chopped spinach for the zucchini

Breadcrumbs: Use panko, oat flour or crushed pork rinds instead

Turkey: Ground chicken, pork or beef work too

Binders: Replace egg with a flax egg or leave out breadcrumbs for gluten-free

Serving Ideas

Toss with zucchini noodles or spaghetti squash for a low-carb option

Stuff meatballs in hoagie rolls for easy meatball subs

Make it a meal prep win: Double the batch and freeze extras for quick heat-and-eat lunches
