- In a large bowl, combine ground turkey, shredded zucchini, breadcrumbs, egg, parmesan, oregano, garlic powder, salt and pepper. Mix well until fully incorporated.
- Form mixture into 1-inch meatballs and place on a baking sheet. Use a small cookie scoop to keep them uniform.
- In a large skillet, heat olive oil over medium-high heat. Cook meatballs in batches for 4-5 minutes per batch, turning frequently until browned on all sides.
- Transfer browned meatballs to a plate. Once all meatballs are cooked, return them to the skillet and pour marinara sauce over top. Simmer for 5 minutes until heated through.
Serves 4 – perfect for a family-friendly weeknight meal

- Grate the zucchini finely so it “hides” in the meatballs
