Empower kids to dish up their own balanced meal with this flavorful chicken stir-fry they can serve themselves right from the pan.
Ingredients
Instructions
- Cook brown rice according to package instructions. Set aside and keep warm.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken and stir-fry for 2-3 minutes until lightly browned but not fully cooked through.
- Add broccoli, bell pepper, snap peas, and garlic. Continue stir-frying for 5 minutes.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and ginger. Pour sauce over chicken and veggie mixture and toss to coat. Cook for 3-4 more minutes until chicken is fully cooked and veggies are tender-crisp.
- Remove from heat and serve immediately over cooked brown rice. Place stir-fry and rice in separate serving dishes so kids can dish up their own portions.
