Spiced Roasted Brussels Sprouts And Bacon Pasta

This roasted brussels sprouts and bacon pasta is the tasty vegetarian dinner both you and the kids will happily devour — no complaints!

Ingredients

Instructions

  1. Preheat oven to 400°F. On a baking sheet, toss brussels sprouts with olive oil, smoked paprika, garlic powder, cayenne, salt and pepper. Spread in a single layer and roast for 20 minutes, shaking halfway.
  2. Cook pasta according to package instructions until al dente. Drain and return to pot.
  3. In a skillet, cook diced bacon over medium heat until crispy. Drain on paper towels, reserving 2 tbsp bacon grease.
  4. Add roasted brussels sprouts and bacon grease to the pasta. Toss to combine and coat evenly.
  5. Remove from heat and stir in parmesan, cooked bacon, and more salt and pepper to taste.

Serves 4 – the perfect easy vegetarian dinner for busy weeknights.

  • Let kids pick out any burnt or overly crispy brussels sprout leaves
  • Toss roasted brussels sprouts in a bit of maple syrup to balance bitterness
  • Top individual portions with extra parmesan and bacon bits

Vegetarian: Omit bacon and use olive oil or vegan butter instead of bacon grease

Vegan: Use vegan parmesan and omit bacon, using olive oil instead
