This roasted brussels sprouts and bacon pasta is the tasty vegetarian dinner both you and the kids will happily devour — no complaints!

- Preheat oven to 400°F. On a baking sheet, toss brussels sprouts with olive oil, smoked paprika, garlic powder, cayenne, salt and pepper. Spread in a single layer and roast for 20 minutes, shaking halfway.
- Cook pasta according to package instructions until al dente. Drain and return to pot.
- In a skillet, cook diced bacon over medium heat until crispy. Drain on paper towels, reserving 2 tbsp bacon grease.
- Add roasted brussels sprouts and bacon grease to the pasta. Toss to combine and coat evenly.
- Remove from heat and stir in parmesan, cooked bacon, and more salt and pepper to taste.
Serves 4 – the perfect easy vegetarian dinner for busy weeknights.

- Let kids pick out any burnt or overly crispy brussels sprout leaves
- Toss roasted brussels sprouts in a bit of maple syrup to balance bitterness
- Top individual portions with extra parmesan and bacon bits

Vegetarian: Omit bacon and use olive oil or vegan butter instead of bacon grease
Vegan: Use vegan parmesan and omit bacon, using olive oil instead
